And healthy living doesn’t have to be complicated or perfect. Sometimes, it’s as simple as finding delicious ways to add more nutritious foods to your day.
That’s exactly what our Program Director, Eileen Pillitteri, had in mind with this easy blueberry chia jam. Packed with blueberries and chia seeds, it’s a simple way to add fruit, fiber, and other nutrients to your routine. Enjoy it on cottage cheese, spread it on toast, swirl it into overnight oats, or spoon it over yogurt. Because taking care of yourself should taste good, too!
Eileen’s Blueberry Chia Jam
Ingredients
- 2 cups frozen blueberries
- ½ cup water
- 2 tablespoons lemon juice
- 2 tablespoons chia seeds
- ¼ cup monk fruit sweetener
Directions
- Combine all ingredients in a pot.
- Bring to a simmer and cook for 10–15 minutes, stirring occasionally.
- Remove from heat and let cool for about 2 hours. The chia seeds will help the jam thicken as it cools.
- Store in the refrigerator and enjoy!
